Vanilla And Lemon Cupcakes





Cupcakes :


175grams unsalted butter
175grams granulated white sugar
3 large eggs
2 ts lemon juice
Zest of 1 large lemon (outer yellow skin)
175grams raising flour
Buttercream Frosting:
400grams icing sugar
200grams unsalted butter
2tsp vanilla extract 
colouring for icing

Vanilla Cupcakes: Preheat oven to 170-180 degrees C and line 12 muffin cups with paper liners.

In the bowl of your electric mixer, or with a hand mixer, beat the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in the lemon juice and lemon zest then add flour slowly.

Evenly fill the muffin cups 3/4 in each and bake for about 17 - 20 minutes or just until set and a toothpick inserted into a cupcake comes out clean. (Do not over bake or the cupcakes will be dry.) Remove from oven and place on a wire rack to cool.


Buttercream Frosting: In an electric mixer, or with a hand mixer, cream the butter and icing sugar until smooth and well blended. Add the vanilla extract.Tint the frosting with desired food color (I use food colouring as its cheaper LOL).

Last, Decorate the cupcakes with buttercream frosting :)
